New Year’s Eve has just passed, and many people make resolutions. One of the most common resolutions is healthy eating. I have some recipes that will be healthy and delicious so you can keep that resolution this year.

Smoothie
This first recipe is a smoothie that will taste tart but sweet at the same time. If I want a start to a healthy day, I will drink this. This recipe can serve up to four people.
Smoothie recipe
You will need
- 2 Bananas
- ½ container Strawberries
- 1 container Blueberries
- 1 ½ Oranges
- 4 spoons Yogurt
- 2 tablespoons Honey
- Blender
Instructions
- Combine all of the fruit (except oranges) and yogurt into a blender
- Blend ingredients together until smooth
- Add honey and freshly squeezed oranges to taste
- Enjoy (If you are picky, you can drain out the seeds)
Spinach and eggs
Next up for a healthy breakfast is spinach with scrambled eggs. This is the perfect way to start off a healthy morning.
Spinach and egg recipe
- 6 eggs
- 1 package of washed spinach
- ½ clove of fresh garlic
- A pinch of salt and pepper
- 2 tablespoon of Olive oil
- ½ cup shredded cheddar cheese
- Frying pan
Instructions
- Chop up the spinach and remove stems
- Mince garlic
- Crack and scramble the eggs
- Add 1 tablespoon of olive oil to frying pan and saute garlic with the spinach until soft
- Add another tablespoon of olive oil to the pan then add the eggs to the sauteed spinach and garlic
- Cook eggs with the spinach and garlic until cooked through
- Remove eggs from heat and add shredded cheese
- Add salt and pepper to taste
- Serve with toast
Mama’s Lentils with rice
The final healthy recipe is Lentils over rice. This meal has warm and savory spices that will warm your belly on a cold Winter’s day
Mama’s Lentil Recipe
You will need
- 1 lb. bag of lentils
- 1 Red Pepper, Orange pepper and yellow pepper
- 3 Celery sticks
- 2 Large cloves of garlic
- 1 Medium onion
- 1 Bunch of cilantro (Parsley can be a substitute)
- 1 Tablespoon each of paprika, turmeric and 2 tablespoons of Ras el Hanout (Moroccan spice blend)
- 2 Boxes of chicken broth
- 1 Cup of Jasmine Rice
- 1 and ½ Cup water or chicken broth
- Food processor
- 2 Pots
Lentils Instructions
- Add all ingredients into a food processor (except for the lentils and the chicken broth) and blend until a thick paste.
- Add vegetable paste to a large stock pot and saute for 5 minutes or until the paste is soft and partially cooked.
- While the vegetables are cooking add the dried spices.
- Add lentils and chicken broth to the pot with the vegetables and bring to a simmer.
- Simmer lentils for 30 minutes until broth is cooked down by a 1/3rd.
Rice Instructions
- Bring 1 and ½ cups water to boil
- Add 1 cup rice to boiling water or chicken broth and cover for 15 minutes until cooked
- Add tumeric and stir thoroughly
- Remove from heat and let sit for 10 minutes
- Serve Lentils over rice
We all think that candy tastes better. If you try to eat healthier, you’ll get clear beautiful skin, a stronger body and a sharp smarter brain. Everyone knows fruits and vegetables don’t always taste great the first time you eat it. However, try to add something healthy to your plate with each meal. Every bite counts!
