Who doesn’t like a delicious cookie? We tried a few cookie recipes and we are the best ones we found. Give them a try!

Snickerdoodle Cookies

Ingredients

  • 3 cups (375g) all-purpose flour 
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  •  1 and 1/3 cup (267g) granulated sugar
  • 1 large egg + 1 large egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract

Topping

  • 1/3 cup (70g) granulated sugar
  • 1 teaspoon ground cinnamon                                                         

Instructions

  • Preheat the oven to 375°F (190°C). Line two large cookie sheets with parchment paper or silicone baking mats, Set aside.
  • Make the topping: Combine the granulated sugar and cinnamon together in a small bowl.
  • Make the cookies: Whisk the flour, cream of tartar, baking soda, cinnamon, and salt together in a medium bowl. In a large bowl using a hand mixer or stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on high speed until smooth and creamy, about 2 minutes. Add the egg, egg yolk, and vanilla extract. Beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients in 3 different parts. The dough will be thick.
    1. In a large bowl using a hand mixer or stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on high speed until smooth, about 2 minutes. Add the egg, egg yolk, and vanilla extract. Beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients in 3 different parts. The dough will be thick.
  • Roll cookie dough into balls, about 1.5 Tablespoons of cookie dough each. Roll the dough balls in cinnamon-sugar topping. Sprinkle extra cinnamon-sugar on top if desired. Arrange 3 inches apart on the baking sheets.
  • Bake cookies for 10 minutes. The cookies will be very puffy and soft. When they are still very warm, lightly press down on them with the back of a spoon or fork to help flatten them out. 

Review

These cookies are so good! They stayed fresh for about a week. They are great for a sweet treat and more delicious than you would have expected.  I have to rate them a 10/10!

Confetti cookies 

Ingredients

  •  2 and ⅛ cups (300 g) all-purpose flour
  •  ½ teaspoon baking soda
  •  ½ teaspoon fine salt
  •  1 cup (2 sticks/227 g) unsalted butter, softened to room temperature
  •  ⅔ cup (130 g) granulated sugar
  •  ¾ cup (85 g) powdered sugar
  •  1 large egg
  •  1 teaspoon vanilla extract
  •  1/2 cup sprinkles (or up to 2/3 cup)

 

Instructions

  • Preheat the oven to 350F/180C. Line 2 baking sheets with parchment paper. Set it aside.
  • In a medium bowl, sift together flour, baking soda, and salt. Set it aside.
  • In a mixer bowl fitted with the paddle attachment, beat butter, granulated sugar, and powdered sugar on medium-low speed for 4 minutes. Beat in egg and vanilla extract just until combined. Add flour mixture and beat just until combined. Mix in sprinkles. Do not overmix.
  • Shape dough into balls, the size of 1.5 tablespoons each, and place on the cookie sheets, spacing them 2-inches apart. Bake for 11-12 minutes until cookies just begin to brown at the edges, but the center is still soft (you don’t want to overbake them). Allow cookies to cool on a baking sheet for 5-10 minutes, then gently transfer to a wire rack to cool completely.

 

Review

These cookies are the best cookies I have ever made and they are so easy to make. Even if you don’t know how to bake, this recipe is very easy to follow and these cookies will taste delicious!
